 Procedure:
  1. In making premier fish jerky, we must be a little careful in choosing the right fish. The fresher, the better. It’s best to avoid fatty fish because the oil makes the fish spoil quickly.
  2. When making any kind of fish jerky, we must consider that all the parts are evenly dry. Try slicing the fish into strips. This will make the fish dry evenly.
  3. After slicing the fish, we must prepare it for the drying. We can use the salting method or the curing method. 
  4. Now, shake off excess salt and then place in a tray. Avoid touching the strips with each other. Dry for 8-12 hours.
  5.  In testing if the strips are already done drying, first, observe the fish. There should not be any moisture  in the surface. Next, squeeze the thickest part of the strips and make sure it should not crumble. Finally, smell and taste it. 
  6. Always allow the fish to cool before storing. If you place it on a container, it will have moist and will hasten spoilage. The leaner the fish, the longer the jerky will store. Be sure to use airtight plastic or glass containers, and place that in a cool, dry place.
